Wine photo of the week 

Grapes drying on racks at Raymond Paccot, Switzerland. This concentrates sweetness and acidity, at the 
expense of volume. These grapes had been drying for some time: the picture was taken in January 2006, 
so the grapes will have been harvested in October or November.
