Highlights: François Rousset-Martin Savagnin Cuvée du Professeur 2018 Côtes du Jura

Had this beauty last night at Dan’s, which is one of the best places in London to drink interesting wine. François has been making his own wines since 2007 – interestingly his father was a microbiologist working with the Hospices de Beaune. He works naturally, farming organically, and although this wine comes from Château Chalon vineyards, this name can’t be used because this wine isn’t made in the oxidative style in demi muids that aren’t topped up.

13.5% alcohol. From gray marl soils in the Château Chalon vineyards, this is a topped-up style of Savagnin (ouillé). Powerful and intense with lovely rich apple and pear fruit as well as a touch of peachy richness but all underpinned by lively acidity and a lovely mineral streak. Nicely textured and really vital. 95/100 (this is available from Natty Boy Wines/Dan’s)
