A beautiful dinner at Lakeview Palace in Macau, matching Chinese food with some top Chinese wines

I arrived tonight in Macau in advance of judging the Wynn Signature Chinese Wine Awards. We dined at the Lakeview Palace, one of several high-end restaurants in Wynn Palace, and as well as a really good set menu we had some great pairings with Chinese wines.

Braised fish broth with aged tangerine peel and vegetables
Steamed lobster with spinach sauce and shredded tofu
Crispy waygu – this was brilliant
Perfect fried rice

Tiansai Skyline of Gobi Sparkling Wine 2017 Xinjiang, China
Some toasty richness here as well as bright lemony fruit. Zesty with some freshness, and subtle bread and toast richness. Stylish sparkling wine with real quality. 93/100

Chateau Nine Peaks Qi Chardonnay 2021 Shandong, China
Delicate, elegant lemony and stony with nice texture. This is on the lighter side but it’s very pretty with nice balance, showing purity and focus. 93/100

Domaine Franco-Chinois Reserve 2019 Hebei, China (magnum)
Classy, gravelly, grainy with sweet blackcurrant fruit and some nice graininess. Grippy but with lovely fruit sweetness. Such balance and poise here with real finesse. 94/100

Sacred Snow Mountain Hua Luo Xiang Yun Ice Wine 2023 Yunnan, China
This is made from Vidal. Concentrated and rich with apricot and lemon as well as grapey richness. Lovely density and finishes spicy. Beautiful. 94 /100
