Highlights: The Hermit Ram Salty White 2022
This is a blend of Pinot Blanc, Sauvignon Blanc and Riesling from organic vineyards in North Canterbury. They are fermented whole bunch. Some is aged in stainless steel, some in amphora, and two barrels are filled and left untopped to develop a layer of flor. The final wine brings together these separate parts. Unfined and unfiltered. The Hermit Ram Salty White 2022 North Canterbury, New Zealand
11.5% alcohol. Full golden colour, this is beautifully salty and fruity with pineapple, pear, ripe apple and some grapefruit. Dense and ripe with nice intensity and a lovely tangy edge from some Flor involvement. Such goodness here. 94/100
