Goode’s crib sheets: Chablis

I’m quite a fan of Chablis, but it pays here (as in most regions) to pick producers. There are lots of good ones, but this is my crib list of who I think are the best. I’ve put the two most famous at the bottom of the list: they need to be acknowledged but their wines are so sought after that they are really expensive, and you are unlikely to find them readily available. Everyone wants just these two! But the others on this list are also fantastic, especially the first six names.

  • De Moor (buy everything they make; low intervention genius – also great Aligoté and Chitry)
  • Thomas Pico/Pattes Loup (low intervention, amazing precision)
  • Samuel Billaud (such good wines; splintered off from the Billaud-Simon domaine after sale)
  • Domaine d’Henri (these are brilliant)
  • E&E Vocoret (superb wines from a great couple)
  • Jean-Paul & Benoît Droin
  • Julien Brocard
  • Louis Moreau
  • Domaine Oudin
  • Patrick Piuze
  • Billaud-Simon
  • Long-Depaquit (owned by Bichot, but doing great work)
  • Daniel-Etienne Defaix (often some older wines can be found on the market)
  • Vincent Dauvissat (one of the two most famous and sought after producers: expensive but brilliant)
  • Raveneau (the other most famous producer: expensive, but so good)
