I can’t find any information on this cuvée, so maybe it’s a special for Cathay Pacific. It’s in their Deck lounge, alongside Laurent Perrier and Taittinger Rosé as the Champagne pour, and it’s really good. Bright and precise with some cherry and lime, with a touch of pithy bitterness (that works well) and very subtle toast and cream, right under the primary fruit. There’s a juicy energy to this wine with some zippiness on the finish, but it has this rather intangible sense of harmony and class to it. Just a little bit of honeyed richness and baked apple emerging after it has been in the glass a while. 93/100
