Video: Vintage time at Hundred Hills, making the Rosé de Saignée cuvée
It’s the penultimate day of harvest at Oxfordshire winery Hundred Hills. They are picking Pinot Noir for the famed Rosé de Saignée cuvée, which is made by macerating destemmed grapes on skins and then pressing to barrel when the colour is right. We tasted the 2022 release and then juice with different periods of skin contact from the 2026 vintage.
