Denis Dubourdieu was a famous wine scientist, winemaker and consultant who had a big impact on white winemaking in Bordeaux. I visit with his son, Jean-Jacques, as he explains the key to making great whites, sweet and dry, and we watch the harvest of ‘noble rot’ affected berries.
