Based in Aÿ, Ayala are the sister house of Bollinger, and they make lovely wines. This is the rare Blanc de Blancs, and it has Ayala’s trademark precision. Lovely stuff.

Chardonnay from the Côte des Blancs: Cramant (25%), Chouilly (23%), Le Mesnil-sur-Oger (14%), Cuis (25%) and Vertus (13%). Aged 6 years on lees, 6 g/l dosage. This is compact, pure and tight with lovely lemony fruit. This has keen acidity with nice brightness to the fruit, and as well as the lemony core, this has some subtle peach and apricot richness and a nice saline minerality. Lovely balance and harmony here. Quite lovely. 94/100
