De Moor, based in Chablis, are one of my favourite producers. Everything they make is just so good. Had this Chitry last night at the amazing Drapers Arms.

This is so textural and refined with characteristic De Moor saltiness as well as crystalline citrus fruit and lovely acidity. Focused and fresh with lovely depth and a chalky mineral character. Such complexity and deliciousness. 95/100
