The Science of Fermentation: explore the fascinating alchemy of fermented food and drink
Dorling Kindersley
This is a beautifully produced illustrated title from Dorling Kindersley, exploring the world of fermented foods and drinks. It’s comprehensive, but eminently accessible and readable, and there are no huge pages of text to read through. It’s also immensely practical, with illustrated guides on how to do it yourself at home. I really like this practical element, which includes tips of troubleshooting, and also covers food safety.
I’m actually quite tempted to try my hand at making pickles, kimchi, miso and even koji! I didn’t realise you could do all this at home.
Of course, wine is included, and I helped with this section. But wine is just a small part of the story, such is the wide array of fermented food and drink. At an RRP of £25 this substantial book is also excellent value for money.
