Jamie Goode visits Xavier Moissenet of Les Champs de Themis, who farms 4.5 hectares of vines organically. He’s based in Bouzeron, which is an appellation in Bourgogne dedicated to the Aligoté grape. He thinks this variety has an important future in the region.
