Highlights: Barbadillo Manzanilla Pastora Pasada en Rama NV

Found this hidden in the racks: an en rama Manzanilla bottled in 2021, which would have been intended for consumption that year because it was bottled unfiltered and unfined. But as this bottle shows, there’s no huge penalty for not drinking en rama sherries and manzanillas fresh. They can be quite beautiful a couple of years later.

Barbadillo Manzanilla Pastora Pasada en Rama NV
15% alcohol. This is the 2021 bottling, and shows that you don’t necessarily have to drink en rama soon after it is bottled. Full yellow/gold in colour, it has beautiful aromatics of seaweed, lemon peel, tea leaves and apples. In the mouth it is tangy and salty, but also has some toasty, nutty richness. There’s complexity and harmony here, with a bit of development but also lovely saline freshness. A beautiful example of a flor-affected sherry. 94/100
