This is a single vineyard estate at the foot of Ditchling Beacon in the South Downs, in East Sussex. Classic Champagne varieties planted on limestone soils. The project began when the Ellis family planted their first three hectares of vines in 2016, and subsequently have planted another 3.8 hectares in 2021. Farming is regenerative, looking to build up soil organic material. They have set aside 3 ha of the farm for biodiversity, and have planted extensive hedgerows. And there are a range of cover crops planted, all with the goal to enhance soil life and encourage more biodiversity. Winemaking includes the use of oak as well as stainless steel, and this NV has 24% reserve wines in the blend.

12% alcohol. Highly aromatic with lovely toast and spice on the nose as well as ripe apple and peach. The palate is broad but remains focused with sweet pear and lively lemony notes, as well as appealing toasty depth. This has excellent balance and depth of flavour. 93/100
